It’s soup weather again and such a great easy lunch you can prepare and have for a few days in a row.
Celery and Asparagus soup.
Asparagus is a prebiotic food and is great for feeding the good bacteria in your gut.
Celery is alkaline so reduces the acidity in your body, it helps reduce inflammation, is an insoluble fiber so great for helping the bowels move, and regulating blood sugar levels to aid with weight loss.
Ingredients
30 mils of coconut oil
1 onion (chopped)
6 stalks of celery (chopped)
3 garlic cloves (minced)
950 mils of water
1 tsp of salt
1 pinch of pepper
402 gm of asparagus (woody ends snapped off)
80 gm hemp seeds (or cashew nuts)
120 grams of baby spinach
Method
- Heat coconut oil in a large stock pot over medium heat. Add onion and celery and sauté for 5 mins until veggies are softened. Add minced garlic and sauté for another minute or so.
- Add water, sea salt and pepper to the pot. Cover and bring to the boil then reduce to a simmer. Remove lid and set asparagus on top. Cover and let it steam for 5 mins or until bright green.
- Add hemp seeds and baby spinach to the pot then blend with a blending stick in the pot and enjoy.
I also added some natural yogurt and pumpkin seeds to mine.
