A great lunch box addition is this homemade energy bar, perfect for that afternoon pick me up.
This bar provides antioxidants (which help reduce free radicals and inflammation, omega 3’s (great for brain health and reducing inflammation, fiber (healthy bowels), and protein to keep you full and satisfied.

Ingredients
Chia seeds 1/4 cup
Pumpkin seeds 1 cup
Sesame seeds. 1/2 cup
Raisins (if you like or dark choc chips). 1/2 cup
Dessicated coconut. 1/2 cup
Vanilla extract 1 tsp
Honey 1/3 cup
Method
- Pre heat oven to 160 degrees
- line baking tin with non-stick baking paper
- Mix all ingredients together in a bowl
- Firmly press ingredients into the lined baking tin
- Bake for 40-50 mins until golden brown
- Cool then cut into slices
- Can be stored in the fridge for up to 10 days.
