This cauliflower soup is great for liver clearance, it also has leeks which are prebiotic and feed your good bacteria, celery which is great for reducing inflammation and aids weight loss, garlic which is great for immune and liver function and turmeric which is anti-inflammatory. I also pop chili flakes, pumpkin seeds, and nutritional yeast on top to give it an extra flavor punch and some texture. Why don’t you give it a whirl!
Ingredients
- 1 head of cauliflower roughly chopped
- 1.5 tsp of turmeric powder
- 1 tbsp olive oil
- 1 leek finely chopped
- 1 stalk celery roughly chopped
- 1 small potato chopped up small
- 2 cloves garlic chopped
- 1 liter of vege stock or stock/bone broth of choice
- 1/2 small handful of pumpkin seeds
- Sprinkle chili flakes to your taste
- 1 tbsp of nutritional yeast
Method
- Pop cauliflower in a bowl with 1/2 of the olive oil and 1 tsp of turmeric powder and toss. Place on some baking paper and roast until golden brown.
- Saute leeks in a pot in the remaining olive oil for 2-3 mins until soft, add the garlic in and sauté for 1 min.
- Add celery and potato and cook for a further 4-5 mins.
- Add cauliflower and remaining turmeric, some pepper, the stock and bring to the boil then reduce to a simmer for 10 mins or until veggies are tender.
- Blend with a stick blender until smooth. If you want a creamy texture you can add a splash of milk or coconut milk or a little bit of sour cream. 6/ Sprinkle with some chili flakes, pumpkin seeds, and nutritional yeast. Enjoy!
